Q: Would this be suitable to lay over laminate flooring in a kitchen whilst house training new puppy?

A: Absolutely, I used this when I had kitchen fitted to stop them scratching my wood floor. It's waterproof and I still have loads left, in case I need anything done I put a strip down so people can walk on it to save my floor. You can't go wrong it's good stuff.

Q: Would this size okay?

A: Yes, as long as you tape the pieces together as they are narrow rolls. I used a tape, I laid this over a new hardwood floor while the walls were being replastered and we had no damage from water or dropped wet plaster.
